  1. Preheat the canola oil in a Dutch oven over medium-high heat to 350°F.
  2. In a large bowl, combine flour, cornstarch, salt, paprika, garlic powder, and cayenne pepper.
  3. In a separate bowl, beat the egg.
  4. Dip each chicken thigh in the egg, then dredge in the flour mixture until fully coated.
  5. Fry chicken thighs in the hot oil until golden brown and crispy, 6-8 minutes per side.
  6. Drain on paper towels or a wire rack.
  7. Toast your hamburger buns, then assemble with lettuce, tomato, pickles, mayonnaise, and the crispy chicken.
