Crispy on the outside, melt-in-your-mouth inside — these fondant potatoes are buttery, rich, and full of savory flavor. A gourmet-style side dish that's surprisingly easy to make. Perfect for holidays, dinner parties, or leveling up a weeknight meal.
Ingredients
- 5 large Russet Potatoes
- 3 tablespoons Canola Oil
- 2 tablespoons Butter, cubed
- 1 Garlic Clove, thinly sliced
- 3 Sprigs of Rosemary
- 1 teaspoon Chopped Rosemary (for garnish)
- 1 cup Chicken Broth
- Kosher Salt and Ground Pepper, to taste
Instructions
- Preheat oven to 450°F (232°C).
- Peel and cut potatoes into even cylinders. Season with salt and pepper.
- In an oven-safe pan, heat canola oil over medium-high heat. Place potatoes flat side down and sear until golden brown.
- Flip potatoes to the other flat side. Add butter, sliced garlic, and rosemary sprigs. Continue cooking and baste with the melted butter and herbs.
- Pour in chicken broth. Carefully transfer pan to oven and roast for 20–25 minutes until tender.
- Garnish with chopped rosemary. Serve hot and enjoy!
