  1. Preheat oven to 450°F (232°C).
  2. Peel and cut potatoes into even cylinders. Season with salt and pepper.
  3. In an oven-safe pan, heat canola oil over medium-high heat. Place potatoes flat side down and sear until golden brown.
  4. Flip potatoes to the other flat side. Add butter, sliced garlic, and rosemary sprigs. Continue cooking and baste with the melted butter and herbs.
  5. Pour in chicken broth. Carefully transfer pan to oven and roast for 20–25 minutes until tender.
  6. Garnish with chopped rosemary. Serve hot and enjoy!
