This Pasta Fagioli recipe is a warm and satisfying bowl of comfort food that is perfect for a cozy dinner on a chilly night. Made with Great Northern beans, ground Italian sweet sausage, and chopped spinach, it's packed with savory flavor and hearty texture.

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, carrots, and celery. Sauté for 5–7 minutes until tender.
  2. Add diced tomatoes (with juices), beans, broth, oregano, basil, salt, and pepper. Stir and bring to a boil.
  3. Reduce heat and simmer for 20–30 minutes until vegetables are soft and flavors meld together.
  4. Meanwhile, cook pasta according to package directions in salted water. Drain and set aside.
  5. In a separate skillet, cook sausage until browned and cooked through. Drain excess grease.
