This Pasta Fagioli recipe is a warm and satisfying bowl of comfort food that is perfect for a cozy dinner on a chilly night. Made with Great Northern beans, ground Italian sweet sausage, and chopped spinach, it's packed with savory flavor and hearty texture.
Ingredients
- 2 tablespoons Olive Oil
- 2 Onions, chopped
- 4 cloves Garlic, minced
- 4 Carrots, diced
- 4 Celery Stalks, diced
- 2 cans (14.5 oz) Diced Tomatoes
- 2 cans Great Northern Beans, drained and rinsed
- 6 cups Chicken or Vegetable Broth
- 2 teaspoons Dried Oregano
- 2 teaspoons Dried Basil
- Salt and Pepper to taste
- 1 pound Ground Italian Sweet Sausage
- 2 cups Fresh Baby Spinach, chopped
- 2 cups Small Pasta (like elbow macaroni or ditalini)
- Fresh Grated Parmesan Cheese, for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, garlic, carrots, and celery. Sauté for 5–7 minutes until tender.
- Add diced tomatoes (with juices), beans, broth, oregano, basil, salt, and pepper. Stir and bring to a boil.
- Reduce heat and simmer for 20–30 minutes until vegetables are soft and flavors meld together.
- Meanwhile, cook pasta according to package directions in salted water. Drain and set aside.
- In a separate skillet, cook sausage until browned and cooked through. Drain excess grease.
- Add sausage and chopped spinach to the soup. Simmer 5–10 minutes until spinach wilts.
- Stir in the cooked pasta. Adjust seasoning as needed.
- Ladle into bowls and top with grated Parmesan cheese. Serve hot.
